Baked, oat fritters with carrots are a real health bomb with only four ingredients. These fritters are filling, nutritious, slightly moist and sweet, although without sugar. They taste best when taken out of the oven, but can also be stored in the fridge and warmed before serving (in the oven or on a low heat in a pan). They are great as breakfast, dinner or snack - not only at home, but also to take away :-)
Oatmeal is worth eating due to a number of health properties. It contains a lot of vitamins, elements, valuable fats, fiber and carbohydrates. In turn, carrots belong to vegetables with the highest healing properties. Carrots strengthens, regulate, cleanse and regenerate our body. Ingredients for carrot and oat fritters:
- 100 g instant oat flakes
(1 cup) - 3 medium carrots
(about 200 g) - 2 medium ripe bananas
(about 350 g) - 2 eggs
- coconut oil or clarified butter to cover the baking paper
Recipe for carrot and oat fritters:
- Crack the eggs into a deeper dish and whisk them with a fork.
- Peel the carrots and grate them on a smallest holes of grater.
- Mash the bananas with a fork until smooth.
- Add bananas, grated carrots and oatmeal to the eggs, mix everything together. Let it stand for about 10 minutes so that the flakes absorb some moisture.
- Set the oven (180 °C with hot air circulation). Put the baking paper on a baking tray and slightly grease with oil or butter.
- Form fritters on a baking tray.
1 very large spoon = 1 fritter - you get around 12 fritters. - Bake for about 20 minutes until golden brown.
